We are looking to provide a multi-site hosting service for our clients in another vertical and currently playing with multi-site and multi-domain.. which is working fine. Wondering if there is a plugin/feature that controls what options are in the sidebar during admin. Basically our users will be sold on the simplicity and even the default sidebar in admin becomes cumberson. I'd like to just include 3-4 like Posts,Pages,Gallery(Plugin) and preferably like to use the supporter plugin to control which ones they see based on what level they are in.
Is this something currently supported/handled and if so which plugin?

We don't currently have a plugin here that will do that, but there are a few on the wordpress.org repository.
Here's one I've used in the past with great success:
