Hey drixie.
Spam is the ultimate thorn in the side of anyone running a WordPress site (or any site with form input), Its a complete nightmare for a multisite user.
There are plugins some more affective than others, but ultimately it probably won't rid you of spam.
Whilst ever comments can be submitted openly, spam will come. Whilst ever members can register and comment (comments closed to non members) , spam will come although less than having comments open.
I've seen software you can purchase which targets WP sites for spam. :-(
Anyway, here are a few you could try and they might help slow it down for you.
