Alright, I was told my subscription to wpmudev was the only subscription I'd ever need. Let's see :)
I need to restrict access and grant access to a few user groups differently than the WP default. For example: editors cannot edit a slideshow plugin that I have listed, and I want them to have access. On another, my editors have access to my contact forms, and I want to restrict this access. What do I need to do?

I just asked this same question and ended up using this plugin:

While it doesn't allow access to certain user plugins, it does remove access to certain links so if your users cannot access the plugin via link. It's quite extensive and I've tried another one that didn't work.
After messing around with it for about an hour, I managed to create a user group that only has access to Manage Orders in Marketpress and not access everything else. I'm not sure if I completely understand it entirely but it works and I was able to come up with settings that worked for that purpose. Prior to that my store manager had access to my themes and quite a few other areas that I did not want them to access.
Give it a go.

I have to agree with @Justin. I've looked at various user access management plugins and this one (Advanced Access Manager) was by far the best that I tried.
Let us know what you think, but I'm sure this will give you the flexibility to manage user access easily.

Amazing plugin, one of my new favorites :)
Worked like a charm, took me just 5 minutes to figure it out. I granted him admin access, but removed all of the links except what he needs :)
