I would like to automatically "close" any dashboard menu when another menu is opened. I think that could help to lighten the WP dashboard which can sometimes become a bit confusing.
Example:
1) User is browsing themes ("Appearance" menu is opened)
2) User clicks on the "Pages" menu
3) "Appearance" menu gets automatically closed.

The menus actually work in sort of a hybrid way at this point. If you have the Appearance menu open by clicking on the 'Appearance' header, then click on another menu header, it'll auto-close the Appearance menu.
In other words, as long as you click on the header menus, it should work pretty much as you've described.
I haven't seen a way to customize them apart from that, I guess since folks have found it so intuitive in how it currently works.
But then there's also the option to collapse the menus at which point the menus are displayed as pop-ups when hovering over the header icons.
So there's a number of ways they could potentially work. Perhaps with a bit of experimentation that'll work well for your purpose?
You're right. But I had taken the habit to click on the extreme right of the menus (you know, there is a little arrow here). And when doing this the menus keep open (there is even a cookie remembering the last state I know). I would like to deactivate this (removing the little arrow or changing its behaviour).
