(Domain Mapping doesn't show up as an option when starting this discussion even though it is installed for the domain I selected)

This says I will be able to choose several options which I don't see in my admin area (see attached screenshot). I specifically need the option for administration mapping because I can almost guarantee users will try to map their domain before it is configured and then get locked out of the admin area.

Are you talking about the option displayed in the Network admin area ?Also you have provided 2 screenshots here, are you using two different plugins for domain mapping ? Please elaborate so that I can assist you better !

I had the public version of the plugin installed and then I thought I removed it entirely to use the wpmudev. I deleted that plugin, and also the wpmudev version, then re-installed the wmmudev version and and it's all working.

Wow, that is great that its sorted out :)
Generally if we have two plugins to serve the same purpose, we might face issues like this, so you did a great job here :)
