I would like to take the plan details such as Level and Expiration date and put it on the front end of the site so site admins can see it in a front end dashboard I put together. Under this information I would like to put a link directly to the page where they can upgrade which would end up going to /pro-site/?bid=(blog id).
Any thoughts on how this can be done?

Maybe some kind of shortcode like [pro-sites-tables] or... could be implemented.

Well, the /pro-site/?bid=(blog id) page is already meant for this purpose. However it's possible to copy some code to do this of course. The place to look is in the checkout_form() method of the gateway you are using.
I'll consider a shortcode in the future.
