My question is: if the signup page changes, how can I link new customers to the correct page to begin the signup process?
The process to start a new blog was already so nonintuitive that I had to write a tutorial to explain the setup steps. So I need to be able to link directly to the page.

It actually very easy, if your themes support buttons you could the following:
[button size="large" link="[ust_wpsignup_url]" color="green"]Sign Up[/button]This will create a button with a text in the middle that says Sign Up and when you click on the button you will be take to the signup location. ;)

Though minglemooch gave you a great answer, it is not necessary to use this option if you do not want to. That is why it is optional.
