Based on what I have seen about the Chat plugin, it appears to be more like a chat room - where everyone on the site sees everything that is being discussed. Is that correct? If so, can anyone recommend a good chat plugin that allows one-on-one chats instead of a chat room experience?

You are correct. It's a chat room plugin, not a one-on-one solution. I'm actually unaware of a solution for this at the moment. Anybody else out there know of a solution? Perhaps something we should consider as a feature request?

If you were to consider setting up an XMPP server, there systems which will authenticate with WordPress. It does get complicated and requires some knowledge on setting it up. You also need a server or VPS.
You can then bind through HTTP. There are then open source options out there which let you have Facebook like chat bars and rooms where people can converse one on one.
An example of a XMPP server is Tigase or eJabbered:

Nope not at all.
I'm just interested in knowing how you get on, then when other members ask the question I can say "I've heard X things about, might be worth looking at" or "not".
I honestly prefer using something like XMPP, its more efficient. But because of how complex it can be, its not for everyone. So an alternative when asked, is always good. :-)
I use Skysa (http://skysa.com). It's a website toolbar, but I only use it for its chat feature and instant messaging. It integrates with WordPress/Buddypress (they have a plugin) and the chat windows follow the user as they browse the site. It costs money, but it still remains the best chat option, IMO.
It does, however, only allow logged in members to connect and chat with each other. XMPP integration may allow you (not sure though) to connect with anonymous visitors (which could make it a powerful conversion/sales tool). Still waiting on that kind of functionality for WP since it needs to be able to distinguish between logged in users and guests.
I would LOVE to see this plugin give me the ability to have on-on-one conversations with my visitors. There are quite a few services out there that do this, but they cost so stinking much. It would be great if this plugin enabled us to enter an XMPP server address.
I really have no idea if it could even work like that...

I think the problem for end users would be the set up of their own XMPP servers. But if they want a scalable and reliable solution then its a good option. :-)

I would like to have Video Chat on my BuddyPress site but really need something that also works with iPads (and most require Flash). Has anyone seen a video chat solution for iPad users?

I've stopped using skysa 'coz i've started trying wpmudev. i got a month of subscription and so far i'm loving it in here coz of the response of people when you have troubles and stuff to ask.
However, wibiya is also good it doesn't connect to wordpress actually like skysa.. it connects to fb, twitter, linkedin ,yahoo etc.. for you to chat with your friends in those network..i think skype is good if you want one on one chat that is integrated with WP users.
Right now I'll try cometchat and see how it goes.. I'll give feedback for it.

I thicnk cometchat is totally cool because it support video chat. Chat room is sound terrific but what will happened on multisite if individual member got chat plugin.

I ran this on Joomla and it worked realy well. I have not tried it on wordpress but am considering using it again.

Yes CometChat is really cool but it's a bit expensive. :) It would really be helpful if WPMUDev will have this kind of plugin.

Has anyone even considered the trolling and implications of not being able to control whom is chatting?
What about liability for the site owner?
One kid badgers another kid whom then commits suicide, you facilitated the crime are you now liable?
Unfortunately there are a lot of people that would use something like this to cause mayhem and possibly and literally terrorize other people using it.
Has anyone even considered these possibilities of misuse and no way to control it?
It seems not.

I think that's of concern for a "chat room" setup - what the plugin is now.
But one-on-one chat for the Admin of a site would be just fine.
