As above. … Is there a way for a non-author, or an author, to subscribe to wiki page updates by other authors via RSS, or email? … We are creating several pages of wiki for medical information, and any new information is important.

Many people prefer to get information through a News Reader of some sort, like Google Reader, NetNewswire, or some other piece of software, rather than email. … Since the information contained in a WIKI is more often a piece of news type information, rather than an email type of information. …
While an email option is good for my colleagues and I to keep tract of our owned wiki pages so that we consider the information to be correct, an RSS feed would be more useful for interested parties to subscribe to.

Thank you Kimberly, I will go look at it. ... My only question is, "Will it create an update for the page whenever the page changes?" ... We will not be adding new tags, or category information with each update.

Hi and Welcome to WPMU forums!
Looking into the installation instructions it seems you can set this option via the Wiki creation page:
4. Decide if you want to enable email notifications of updates on the wiki page.
Email notifications are used to provide updates of when changes are made to the wiki page
Please let me know if you need anything more!

But we would also like to be able to publish a URL that would subscribe the visitor, or any interested person to the RSS feed for a single page.

We do have a rss feed creator that creates a feed from tags and categories
