Is there a plug-in which will modify the dashboard's listing of posts/pages and show which posts/pages have a featured image (and optionally show that featured image)?

There is a way to do it, I have one of my sites setup like this. But I can't recall how I did it. It wasn't a plugin.
I originally found the solution in the WordPress Reddit, however Reddit is having major issues today because of Amazon or something. When they come back up I'll look through my history and see if I can find how I did it again.
That code doesn't seem to work with the posts on WP 3.1.1 (at least my installation) and not all of the thumbnails for pages are being shown - did you update the code at all?
I didn't write the code myself. But I can say this for sure, I originally added it to a site of mine running 3.1.1 and it is working. Check your Apache error logs and see what's failing, that's your best chance at figuring it out.
Thanks for your help - it turns out that the plug-in called "Auto Social Poster" is taking away the column when it's activated - so that's where the problem lies.

You mean that you can see the post thumbnail in the post overview?

I'm talking about the area that's shown when you click Posts->Posts. Is it called the post overview?
