With the Studio Theme, I'm trying to add a menu button labeled "Blog" that goes to http://sweetaddress.com/blog/ and shows the, uh, blog the way the demo does. I've done it before on another network, but I can't remember how to do it.
I have one post. I created a Page titled "blog" - It displays the page rather than posts. Settings > Reading options don't seem to work.

With that "Blog" page you created, you should be able to specify a template on that page, it's in the page's options when you create/edit the page. And I believe it's called "Blog template".
From there, you can simply add that page to your menu in the WordPress menu editor and it should work just fine.
