I would like to suggest a full mobile solution for WPMU. I would imagine it should have a theme for when people go on a blog from a mobile (this exists as a plugin for WP) as well as an admin panel for prople loggin on using their mobile phone.
Maybe this could be developed with the help of someone who's done the theme thing? What would have to be added is WPMU compability and an admin panel that goes to work when the system identifyes the user as being on a mobile device.

It to be honest, it wouldn't work. 1) All the different phones operate different when they show their web pages. A perfect example of this Automattic own solution for the iphone which was made for a specific phone. MT does phone specific interfaces as well. 2) All those different phones report themselves differently and there's no real way to check for all of them. and 3) Doing this with wp-super-cache in full mode is a pain as the system will want to pass those static files.
There's a long thread on this on the mu forums somewhere although I can't find it right off. Workaround really is to run wp-super-cache in half mode and use one of the wp solutions. Seems to work fine.

I've seen one of the WP plugins working activated sitewide. Superchache supports it now too.
