I installed your "all in one seo pack" plug-in originally when we launched our WP3 site. It was put in the must use folder (I assume these were the instructions at the time, as our developer installed it that way). Now, I can't seem to figure out how to uninstall is from the site to upgrade and/or install the new SEO plugin that you guys put together. Any ideas?

If you properly delete the files from your server (via FTP presumably), there is technically no way the file could still show in your admin area as being installed. It may be that you also have a copy of a different version of the same plugin in your plugins folder.
You'll just need to ensure that all versions and copies of the plugin are removed from your server folder and you should not see it in your admin area.
Just had a quick response from Ulrich on another matter but don't forget to remove the rewrite rule in your .htaccess page for the old 'all in one seo' when you change to WPMU DEV SEO.
Had some issues myself and whipping out the line that has sitemap.php in it did the trick.
I can't remember if there were two lines or just one when setting up the old 'all in one seo' or just the one.
Perhaps someone to clarify exactly what line/s should be taken out .htaccess concerning 'All in One SEO' before you change to WPMU DEV SEO plug-in?

You just delete the file to uninstall.

Right... except that when I deleted it, it didn't uninstall.
