According to https://codex.wordpress.org/Category_Templates archive.php is one of the template files WP will look at to display your category theme. But, your coursepress theme is using content-course.php
I asked about the category title and description not showing what I defined on this thread: https://premium.wpmudev.org/forums/topic/coursepress-category-rendering and even that tech thought it would be rendered by archive.php

I cannot extend or modify your themes if your devs are not going to use WP best theme practices.
