The best way to style your text, including your headers and paragraph text, is to do it all in one go. The easiest way to do this is to add sample text to your site, style it in the Theme Settings, and then delete it.
I need clarification where to paste the text in any text element.
Here’s how you do it:
Copy the sample text we’ve uploaded over at CodePen and make sure the formatting remains intact
Paste the text into any text element in Upfront
Go to Theme Settings and select Typography if it isn’t already open
For each type element, choose a typeface, weight/style, color, size and line height

    I hope you're well today and thank you for your question!

    I think you're doing it right except I would rather add that "reference" text via back-end WP editor (e.g. as a post content) and then made sure that that text includes for example:

    - paragraphs
    - headers of various size
    - bolded text
    - italics
    - quotations etc

    After you save such post/page you could then go to the Upfront front-end editor end be able to easily set Typography parameters for each of aforementioned test elements the way you described.

    This should do the trick I think.
