    Hello Josh,

I hope you're well today and thank you for your question!

Most of popular "user submitted posts" plugin either do not support custom post types or require some additional coding. There's however an add-on plugin that enhances Gravity Forms functionality and seems to be supporting custom post types. Take a look here please:

    https://wordpress.org/plugins/gravity-forms-custom-post-types/

This plugin would require Gravity Forms to be installed an enabled on your setup and should let you create custom forms that would post user submitted content as selected custom post type. Furthermore, it should be possible to populate a form the way it would reflect your custom post type configuration.

    I hope that helps!
    Best regards,
    Adam
